Wall ovens or built-in ovens function the same as any range, just without the
cooktop. Wall ovens were designed to free up space in the kitchen, and to give it a custom look. They come in singles, doubles, single oven with microwave, or double oven with microwave, or a combination of any of these, with or without a broiling or storage tray.
Wall ovens come in a few different sizes, 24-inch, 27-inch, and 30-inches wide. The heights on these appliances vary depending upon the combination you choose. Gas or electric?
If you step into any chef’s kitchen you’ll discover that they use electric, convection (at the least) ovens. Higher-end models of ovens have other technology that combines the use of microwaves and baking to produce an almost perfect meal. GE calls theirs "trivection", but I’m only going to cover the basics here. That research you must do when you get deeper into deciding on a name brand for your oven. Chef’s prefer convection ovens for their fast and even baking. Convection ovens have a fan inside of the cavity that circulates the heat evenly throughout the cavity to produce that even bake.
Cleaning
There are three types of cleaning methods: self-cleaning, continuous cleaning, and standard cleaning ovens.
A self-cleaning oven has a high-heat cycle, with temperatures as high as 1,000 degrees. The heat turns oven soil into a gray powdery ash that can be wiped up with a damp sponge. When the cleaning cycle is in use, the oven is locked. Self-cleaning ovens have a special porcelain enamel on the inside and a special door seal to stand up to the high temperatures.
Continuous-cleaning ovens have walls that have been treated with a catalyst that oxidizes oven soil while the oven operates at normal temperatures (I know science class was a long time ago). This system does not clean as completely as a self-cleaning oven, but eliminating the high heat cycle reduces its purchase price.
Standard cleaning ovens must be cleaned by hand, using soap and water or a commercial oven-cleaning product. Some models have a removable oven bottom or a removable door to make cleaning easier.
Remember, you want your oven as well as all of your appliances to cater to YOU. So make sure their functionality makes your life easier, otherwise it’s like spending money to do more work! With that said, if you don’t have a self-cleaning oven look for other cleaning features such as a removable door, a removable oven bottom, a tilting electric element and digital controls. All of these features will make cleaning up more easy and quicker for you. However the self-cleaning option would really be worth the extra money; not only do you save time and effort, but the cycle generally costs only a dollar per cleaning - less than a can of EZ-Off.
Also check for other special features such as controls that automatically start or turn off the oven in your absence, digital control panels, LED displays, digital timers, even-baking features, high and low broiler or double-broiler settings, storage drawers, and meat probes to name a few.
Energy Efficiency
Like ranges, wall ovens are not considered to be energy efficient appliances. So don't waste your valuable time comparing energy consumption. If any brand name claims to have ENERGY STAR wall ovens, double check with EnergyStar.gov this is a government site that will inform you of every energy compliant appliance made in the U.S.
